Instructions
Place the brisket in a baking dish and pour apple cider vinegar over it, coating all sides for proper marination.
Rub both sides with cumin, salt, pepper, garlic, oregano, paprika, and cloves.
Marinate the brisket in the fridge, ideally overnight. If short on time, at least 1–2 hours is fine.
Preheat your gas grill to high heat.
Sear the brisket on the grill for 20 minutes per side to lock in the juices.
Reduce the heat to 400 ºF for indirect cooking. Cover the brisket with aluminum foil
Cook for 3 hours. Then flip it and cook for another 2 hours.
Remove the brisket from the grill, baste it with its juices, and cover again with foil. Let it rest for 30–45 minutes to redistribute juices.
Slice the brisket against the grain and serve with barbecue sauce, corn, and salad.
Notes
Marinate the brisket at least 4 hours or overnight for maximum flavor.
Use a meat thermometer: target 195–205 ºF for tender, juicy meat.
Sear before slow cooking to lock in juices.
Leftovers keep 3 days in the fridge or 2 months frozen.
Serve with coleslaw, roasted corn, mashed potatoes, or tortillas for a Mexican twist.
Let the brisket rest 30–45 minutes before slicing to redistribute juices.
