Duritos with beans and cheese

Get ready for this tasty street snack, a favorite of many in Mexico: flour or “duritos” chicharrones prepared with beans and cheese! They can be served as a snack or even as dinner!

Normally, I find ready-made duritos in Mexican supermarkets, but I like to buy them raw because that way, they last longer.

If you easily find them already cooked, don’t sweat it, but if not, just grab the raw ones from these stores; they’re easy to prepare, you just need a bit of time. Below, I’ll explain how.

I prefer them with chopped cabbage, but my family likes them more with lettuce. You can offer them as a snack to nibble on, although sometimes they make for a full dinner.

Ingredients

4 raw duritos (if you find them pre-made, you won’t need the oil)
2 cups of refried beans
1 cup of vegetable oil
½ cup of sour cream
½ cup of fresh cheese
1 sliced avocado (optional)
½ lettuce or cabbage, sliced or chopped
2 diced tomatoes
½ diced onion
Hot sauce
A spatula for flipping
Tongs

HOW TO PREPARE RAW FLOUR DURITOS

Heat the oil over medium heat in a deep, large frying pan since the duritos will expand in size, and you’ll need space to flip them. Be cautious with the hot oil as it can splatter.

Place a plate with a napkin on top to put the duritos on and absorb excess oil.

When the oil is hot, add the raw durito, and you’ll immediately notice it starting to puff up. Fry it until it stretches completely and turns golden brown without burning. Remove it from the oil and place it on the plate with the napkin, then add salt.

The durito should be soft and crispy. If it turns out tough or with dark spots, the oil was too cold. If it turns grayish, the oil was too hot.

Repeat the steps with each of the duritos.

Top the duritos with all ingredients.

HOW TO MAKE PREPARED DURITOS (from the store)

Place a durito on a plate, spread one or two tablespoons of refried beans, and add lettuce (or cabbage), tomato, onion, avocado, cheese, sour cream, lime, and salsa. Enjoy!
