Elbow Macaroni salad

This traditional Mexican macaroni salad with ham is a simple but delicious recipe. You can serve it as a salad or as a side with some dishes like chicken salad. These recipes were my mom’s favorite to offer at my birthday parties or snacks when I was a kid.

ELBOW MACARONI SALAD (Mexican macaroni Salad)

Ingredients

  • 1 small elbow pasta package
  • 1 litre Mexican Cream
  • 1 lb ham, diced
  • 1/4 lb shredded cheddar Cheese
  • 1 teaspoon salt or chicken broth powder
  • 1 teaspoon oil
  • water

Add water to a pot and bring to a boil.

Then, add the elbows macaroni pasta and a teaspoon of oil, and mix a little to help the pasta not stick.

Let it cook for a few minutes until the pasta is soft or “al dente”, that is, when you bite the pasta, the middle looks a little darker.

Drain the pasta and let it cool. You can put it in the fridge slightly to speed up this step.

When the pasta is cold, add the Mexican cream, ham, and yellow cheese, and mix. add salt to taste and you’re done!

You can also add chopped celery or lettuce, depending on your taste.

Serve the Mexican macaroni salad with saltines crackers and jalapeño peppers.

I hope you enjoy my mom’s Mexican macaroni salad, as my family does!

Buen provecho!
