Charro beans or frijoles charros whatever you want to call them! Today you will learn how to make an authentic Mexican recipe of charro beans.
They are the perfect side dish for charcoal-grilled meat or tamales. Every good Mexican fiesta or Posada has them!
This is my family’s recipe of Charro beans or Frijoles a la Charra, Monterrey style. My paternal grandmother taught my mother how to make them, she then taught me and now I’m sharing it with you.
My homemade charro beans recipe is delicious and thick. They taste like a Mexican home especially if you cook them in a clay pot. Jalapeño peppers are optional but, they provide a spicy flavor. Some people also add ham to the frijoles charros, but I don’t.
It is common for Mexican taquerias or street tacos to serve the tacos with a little plate of charros beans, and this is the improved version of those. You will see, after taste this recipe you’ll love it.
Some people say “If I wanted to eat beans, I’d just do it at home”. Well, be ready to be impressed because when you try these charro beans, you will going to ask for seconds. They are so delicious.

CHARRO BEANS MEXICAN RECIPE (FRIJOLES CHARROS)
Serves: 20-25 people
Ingredients
2 lbs of clean pinto beans
2 large pork chorizos
300 gr of Pork Bacon cut in squares
200 gr of hot dog franks cut into squares
4 Pig’s trotters (raw)
10 garlic cloves
1 bunch of chopped cilantro
3 chopped red tomatoes
1 Onion
1 teaspoon of vegetable oil
1 medium can of pickled jalapeño peppers
Salt to taste
Cook the pig’s trotters in a pot with some salt, for about an hour or until soft.
Meanwhile, in a separate pot, cook the beans for about an hour with salt, add half an onion and the garlic (save the other half of the onion for later).
When the beans are soft and cooked, remove the garlic head and discard it. Turn off the heat and separate.

After that, heat oil in a frying pan and add the chorizo, bacon, chorizo, and the rest of the onion. Fry everything until chorizo is brown or cooked. Add the tomato and simmer for about two minutes.
After that time, add this mixture to the pot with the cooked beans.
When the pig’s trotters are ready, add them to the beans, including the broth in which they were cooked.
Put the pot of charro beans back on the heat. Add the whole can of pickled jalapeños (optional) and the chopped cilantro to the beans, let it boil together for about five minutes and that’s it!

This Charro beans Mexican recipe is an excellent side for tacos de trompo, tacos de bistec, tamales, carne asada and almost any Mexican food.
Serve them hot with corn tortillas.

- 1 bunch of cilantro chopped
