What is charro beans or frijoles charros?
Frijoles a la charra or frijoles charros is a traditional Mexican bean soup. It’s usually made with onion, bacon, and other vegetables.
They are named after “Charros, Mexican men practicing horse riding and dressed in traditional Mexican clothes.
My homemade charro beans recipe is delicious and thick. They taste like a Mexican home especially if you cook them in a clay pot.
Frijoles Charros ingredients
Beans. It;’s the main ingredient, we use Bayo beans but you can use other types of Mexican beans such as Pinto eans, Mayocoba, Peruano, or, Flor de Mayo.
Cueritos de puerco. Cueritos are pork skin, these can be pickled or raw. Pickled cueritos can be eaten as a snack but for this recipe we will use them raw.
Bacon. It brings a lot of flavor to this recipe.
Pig trotters, pig’s foot is used to add flavor and thick the beans stock, they’re delicious.
Jalapeño peppers are optional but, they provide a spicy flavor.
Ham. Some people add ham to the frijoles charros, but I don’t.
It is common for Mexican taquerias or street tacos to serve the tacos with a little plate of charros beans, and this is the improved version of those. You will see, after tasting this recipe you’ll love it.

How to make CHARRO BEANS (FRIJOLES CHARROS)
Serves: 20-25 people
Ingredients
2 lbs of clean pinto beans
2 large pork chorizos
300 gr of Pork Bacon cut into squares
200 gr of hot dog franks cut into squares
4 Pig’s trotters (raw)
10 garlic cloves
1 bunch of chopped cilantro
3 chopped red tomatoes
1 Onion
1 teaspoon of vegetable oil
1 medium can of pickled jalapeño peppers
water
Salt to taste
Cook the pig’s trotters in a pot with some salt, for about an hour or until soft.
Meanwhile, in a separate pot, cook the beans for about an hour with salt, add half an onion and the garlic (save the other half of the onion for later).
When the beans are soft and cooked, remove the garlic head and discard it. Turn off the heat and separate.

After that, heat oil in a frying pan and add the chorizo, bacon, chorizo, and the rest of the onion. Fry everything until chorizo is brown or cooked. Add the tomato and simmer for about two minutes.
After that time, add this mixture to the pot with the cooked beans.
When the pig’s trotters are ready, add them to the beans, including the broth in which they were cooked.
Put the pot of charro beans back on the heat. Add the whole can of pickled jalapeños (optional) and the chopped cilantro to the beans, let it boil together for about five minutes and that’s it!
