Lentil bacon soup or charro lentils

Lentil bacon soup recipe came from my imagination one day, when I had a craving for charro beans but found myself at home with no beans, but rather lentils, and the result came out great!.

My family really enjoyed my charro lentils, and ever since then, I make lentils this way, modifying the recipe with different vegetables such this lentils with cauliflower soup.

You can also make other dishes with lentils such: lentils soup, salads or you can also add them to pasta.

Now, let me share my charro lentils recipe or how to make lentejas with bacon.

Lentil bacon soup recipe

Lentils like beans, are a legumes that contains high levels of protein and fiber. They are cheap and so easy to cook, they are great for soups and some people use them to make salads too.

They cook faster than beans, you don’t need to soak them before cooking. Lentils are high in carbs, so you better avoid eat them If you are in a keto diet.

To eat lentils you have to cook them, you can not eat raw lentils. An easy way to enjoy lentils is simply cooking them with salt to taste, one garlic clove and onion. This is the way my middle son likes them, plain Lentils.

Ingredients

(Serves 6 people)

  • 1 lb lentils
  • 2 liters water
  • 1 bacon package
  • 1 tomato
  • 1 onion
  • 2 garlic cloves
  • cilantro (2 or 3 branches)
  • salt

Clean the lentils removing any debris that could be in the package like little rocks, dirt, etc. Now wash the lentils under tap water. Drain the lentils.

In a saucepan, bring the lentils to a boil along with water, salt, garlic, and 1/2 onion, turn down the heat and let it cook until softened, about sixty minutes.

If you like creamier lentils, use less water to cook them, you can also crush them a little when they’re cooked.

While the lentils are cooking, chop the onion, tomato and garlic cloves.

Cut the bacon in half-inch slices.

Heat another pan, fry the bacon (without oil); add the onion and when onion gets transparent, incorporate diced tomato, cilantro and mix for about two minutes.

When the lentils are cooked, add the bacon mixture to the lentils and let it boil some minutes to mix the flavors.

Serve the lentil bacon soup or charro lentils hot with tortillas.

Ingredients
  

  • 1 lb Lentils clean
  • 2 cups Water
  • 1 pkg Bacon
  • 1 Tomato diced
  • 1 Onion chopped

  • 2 Cilantro branches
  • 1 tbsp Salt

Instructions

  • Serve the lentils hot with tortillas.
