Ingredients
1 bag of 1 lb or 1/2 kg lentils
5 cups water
1 cauliflower, chopped
3 carrots, sliced
3 coriander branches
2 chopped tomatoes
1/2 onion, chopped
1 garlic clove
Salt to taste
1/2 teaspoon oil

We clean and wash the lentils. We cook them in a pot with carrots, four cups of water, garlic and salt to taste

In addition, heat oil in a frying pan and fry the onion, when it is clear, add the chopped tomato and coriander; let's fry a little and separate.

When the lentils are almost ready, add the pan mixture; cauliflower, let's boil the heat and let it boil until the lentils and cauliflower are soft, there are those who prefer almost raw cauliflower, but that's already to everyone's taste.

You can season with chicken broth powder or salt to taste.

Accompany it with tortillas or toast and if you like spicy add some jalapeno chiles or a very rich sauce.
