Mexican Lentil Soup with cauliflower

Lentils with cauliflower is a great soup recipe for Lent because it is meatless. Get ready to enjoy this warm soup with your family.

In this cool weather, the broths and soups are the best; this time I prepared this recipe of lentils with cauliflower and carrot, which I hope you like.

Lentils and other legumes are a year-round dish, but they get very used to Lent because during this season you do not eat meat.

This lentil soup can also be served as an entry or companion to some main course, it is easy to make and very economical.

Cauliflower lentil Soup Mexican recipe

Ingredients
1 lb lentils
5 cups water
1 cauliflower, chopped
3 carrots, sliced
3 cilantro branches
2 chopped tomatoes
1/2 onion, chopped
1 garlic clove
Salt to taste
1/2 teaspoon oil

Clean and wash the lentils. Cook them in a pot with carrots, four cups of water, garlic, and salt to taste.

In addition, heat oil in a frying pan and fry the onion, when it is clear, add the chopped tomato and cilantro; fry it a little and separate.

When the lentils are soft and almost ready, add the pan sauce and cauliflower.

Shimmer until the lentils and cauliflower are soft.

You can season this cauliflower lentil soup with salt to taste.

Serve with tortillas or toast and if you like spicy add some jalapeno chiles or green sauce.
