My eldest son has always liked the meatloaf my mom makes. Every time we go to Monterrey he asks her to cook meatloaf or chicken salad.
This time my mom came to visit, and I asked her to teach me how to prepare meatloaf. I hadn’t tried it before because it looked difficult, but it’s a lot easier than I thought, I’ve done it several times since then.
What to add to meatloaf?
As my mom says “You can put whatever you want on the meatloaf” so it depends on the taste of everyone.
For example, I love the taste of bacon or sausage, but there are those who enjoy chorizo or some vegetables like peas and carrots. So add what you have at home at that time.
Serve the meatloaf with a lettuce salad, spaghetti, mashed potatoes, or vegetables.
The best meat for meatloaf
The best meat to make this Mexican Meatloaf is regular ground beef or Ground Chuck. This will make the meatloaf juice. It´s different than when you make picadillo.
Mexican MEATLOAF RECIPE (PASTEL DE CARNE)
Ingredients
- 1 1/2 Kg (3 lbs) of ground beef
- 1/4 kg of franks in pieces
- 500g tomatoes or spaghetti sauce
- 1 small onion, sliced
- 1 bottle of olives (or peas, optional)
- 3 eggs
- 3/4 cup oatmeal
- Aluminum foil
- Garlic powder
- Pepper
- Salt to taste

Preheat the oven to 400F.
Grease a baking mold either with spray oil or using an oil-soaked napkin all over the surface.
In a large bowl, place all the ingredients but the onion: ground meat, sausages, tomato sauce, eggs, oats, olives, onion, salt, pepper, and garlic.
Mix until the ingredients are fully integrated.
Place the meat mixture in the greased baking mold and spread it.
Spread sliced onion over the meatloaf.
Cover the meatloaf with foil and take it to the oven for an hour. Remove the foil in the last half hour, so that the meatloaf is a little roasted.
Remove from the oven after that time.
