Shrimp patties with nopales and red sauce
Ingredients
- ½ kg of nopales
- 1 onion (separated amount)
- 1 cup dry shrimp powder
- 5 eggs
- 2 tomatoes
- 2 garlic cloves
- 6 guajillo peppers
- 2 ancho peppers
- Salt to taste
Wash the nopales and cut into slices.
Cook nopales with water, a tablespoon of salt, ¼ onion, and a clove of garlic. Let cook until softened. To stop.
While the nopalitos are cooking, clean the chiles, devein and remove the seeds.
Cook the chiles with water and a clove of garlic just until they boil and leave them to soak for about five minutes in the same water. To stop.
Blend the tomatoes with the chilies and a little of the water where they were cooked.
Then you can strain the chili mixture to remove the skins (optional).
To make the pancakes:
Separate the egg whites from the yolks.
Beat the egg whites to a point of nougat (like foam) with the mixer and add the yolks little by little, continue beating.
Gradually add the ground shrimp and mix gently with a spatula, so as not to lose the consistency of the frothy egg.
Heat enough oil in a pan, but do not cover the pancakes.
To make the shimp cakes, take a tablespoon of the shrimp and egg mixture and carefully place it in the pan.
You can fry several pancakes at once, you usually fit three to four pancakes in the pan. Separate the pancakes, place on top of a napkin to absorb the oil a little.
Flip the pancakes when you see they are browning, once, and let them brown on the other side.
Once you have all the pancakes ready, heat oil in a pan and fry half an onion in slices.
Add the chili mixture, plus three cups of water, season to taste with salt and bring to a boil.
Stir in the nopales and pancakes carefully, cook for ten more minutes so that the flavors mix.
Remove from the heat and serve hot.
